KiNiMi Kitchen’s Quick Side Dishes Perfect For Any Holiday

If you’re anything like me or my family, you’re still thinking through your holiday menu. Are we going traditional this year? Will we try something completely different? Is brunch an option…? And after going through a long list of maybe this, maybe that, I don’t care, and I don’t feel like cooking, you’re contemplating catered or store bought. But before you dish the home cooked meal and scour the market for caterer/restaurant recommendations, check out my latest feature because she’ll have you happily selecting quick side dishes that are perfect and can be prepared at home.

Creamy Garlic Mashed Potatoes

• 4-5 Large Potatoes 

• 3/4 c Heavy Whipping Cream

• 1/4 c butter (salted)

• 1/2 c Chicken Broth 

• 2 – 3 Green Onion stalks – chopped 

• 1/2 c Parmesan Cheese 

• Garlic Powder

• Onion Powder

• Black Pepper 

To Do:

– Wash potatoes well

– Boil potatoes in seasoned water (all seasonings mentioned above)

– boil until soft, check by using a knife, if it comes out easily, they’re finished!

– add all ingredients to mixer or hand mash 

– Adjust seasoning according to taste

– top with green onions and cheese 

Honey Goat Cheese Stuffed Pretzel Rolls w/ Strawberry Jalapeño Glaze 

 • 6-8 Pretzel rolls 

 • 6-8 Pretzel rolls 

• 1 log Honey goat cheese 

• 5 TBSP strawberry jalapeño jam 

• 4 TBSP honey 

• 1/4 c melted butter 

 To Do:

– Slit tops of pretzel rolls 

– Stuff with goat cheese 

– Bake in oven @ 400 until cheese melts 

– Mix the remaining ingredients into a glaze 

– Brush rolls 

– Sprinkle with parsley 

 

 

 

Herb Candied Carrot Ribbons

• 5-6 Carrots

• 1/2 c Light Brown Sugar  

• 1/8 c Butter 

• 1/8 c Chicken Broth

• 1/2 tsp Thyme

• 1/4 tsp Italian Seasoning 

• dash salt 

• 1 Lime 

To Do:

– Heat butter & brown sugar over medium heat until the butter is melted 

– Wash carrots peel out layer & discard

– Use peeler to make ribbons out of the remaining carrots

– Add thyme, Italian seasoning + salt 

– Add Lime Juice 

– Stir in Chicken Broth 

– Toss in Carrot Ribbons 

– Cook 3-4 mins until slightly tender 

– Sprinkle with parsley  

Sweet + Smoky Green Bean Bundles 

• 1 packages fresh Green Beans 

• 8-10 slices of thick cut back – cut in half 

• 1/2 c Soy Sauce

• 1/8 c Dales Steak Seasoning

• 3-4 dashes Liquid Smoke

• 1/2 c Honey 

• 1-2 TSP Garlic Powder 

• 1 TSP Onion Powder 

 To Do:

– Wash Green Beans 

– Cut off ends 

– Make bundles (6-8 great beans)

– Wrap with bacon 

– Place in baking dish  “seam side down”

– Mix remaining ingredients for sauce 

– Pour over bundles 

– Bake at 425 until bacon is cooked and a bit crispy 

Not Your Average Cherry Pie:

• 1 can Cherry Pie filling 

• 1/2 TBSP Almond Emulsion 

• 1 package rolled pie crust 

• 3 TBSP Melted Butter 

•  Powdered Sugar  

Not Your Average Cherry Pie:

To Do:

 – Mix Cherry pie filling and Emulsion

– Add pie crust to pie plate 

– Pour filling  into pie plate   

– Top with another layer of crust 

– Bake at 375 until crust is light brown

– Brush with Melted Butter 

– Dust with Powdered Sugar 

– Serve with Whipped Cream
